Pumpkin Muffins
1 1/2 c. canned pumpkin
1 c. sugar
1 c. oil
3 eggs
2 1/4 c. flour
1 1/2 t. baking soda
1 1/2 t. baking powder
1 1/2 t. salt
1 1/2 t. cinnamon
1/2 t. vanilla
1/2 c. raisins
1/2 c. chopped nuts
Beat together pumpkin, oil and sugar. Add eggs. Mix in remaining
ingredients and mix well. Put into muffin cups and bake for 15
minutes at 375'. Makes 2 dozen.
These muffins freeze well.
